A low-sugar thirst quencher

Cow beetcha is an allusion to kombucha, a culture used to ferment sweetened tea. When making kefir hangop, whey leaks from the bags in which the kefir is hung. To this whey we add beetroot juice, ginger and a little lemon. This produces a slightly acidic, low-sugar thirst quencher, similar to kombucha. Cow beetcha contains the same bacteria and yeasts that are also in our raw milk kefir.
